Description

  • rough textured hastate triangular with basal lobes, ovate egg-shaped, wide at base or sagittate shaped like an arrowhead green leaves with a slightly crenate with rounded teeth margin
  • some varieties have prominent veins the leaves

preparation

  1. pick tender leaves for salads
  2. steam or boil serve with olive oil and lemon
  3. use as spinach, goes well with beans and other legumes

There are many species and sub-species of the genus Rumex (docks and sorrels) in Cyprus.

Some can be found all over the island, others in coastal areas, others restricted to higher altitudes.

There is a large range of leaf morphology in the genus:

Rumex acetosella, Rumex bucephalophorus, Rumex conglomeratus, Rumex cristatus, Rumex cyprius, Rumex dentatus, Rumex pulcher and Rumex vesicarius
