Description

  • thick white stem
  • light to dark brown coloured cap
  • cap shape is variable, initially hemispherical, convex later almost flat and finally funnel-shaped
  • gills are initially white turning grey at maturity

preparation

  1. clean the mushrooms with a brush or damp cloth to remove any dirt or debris
  2. avoid washing them as they can absorb water and become soggy
  3. shallow fry in oil
  4. they have a rich, umami flavour and firm texture

extra info

Can be confused with Paxillus involutus which looks similar. Paxillus involutus cab be distinguished as its gills darken when pressed and its flesh turns red when cut.
