Description

  • when young, it has a tall, white, cylindrical cap covered in shaggy scales
  • as it matures, the cap expands and turns bell-shaped
  • white gills beneath the cap become black as the mushroom matures

preparation

  1. consume when young and still white as once the cap starts to turn black and liquefy, it is no longer suitable for consumption
  2. clean the mushrooms with a brush or damp cloth to remove any dirt or debris
  3. avoid washing them as they can absorb water and become soggy
  4. they have a light, delicate earthy flavour

This mushroom is unusual because it will turn black and dissolve itself in a matter of hours after being picked or depositing spores.
