Olive oil and lemon juice dressing is the perfect accompaniment for steamed wild foraged greens.

Some of the greens have such a fine and delicate flavour that anything other than this dressing would obliterate aromas and tastes.

The traditional and recommended way to cook your foraged greens is steamed. Take a large frying pan and fill with boiling water to cover the base to about 5mm depth. Add 3-4 tbsp of oilve oil to the water. Add your greens and stir. Cook for 5 minutes. 

The slightly bitter and earthy taste of the greens pairs perfectly with the tangy and acidic taste of the lemon juice. The olive oil adds a rich and depth of flavor to the dish. Additionally, olive oil is a great source of heart-healthy fat and antioxidants. Lemon juice is not only good for adding flavor, but it also has numerous health benefits like improving digestion and boosting immunity.
