Description

  • white to cream-colored cap that can reach up to 10 centimetres in diameter
  • The cap is initially rounded and then flattens out as it matures
  • The gills underneath the cap start off pink and gradually turn dark brown as the mushroom ages
  • Avoid picking mushrooms that have yellow or greenish gills, as these can be toxic

preparation

  1. clean the mushrooms with a brush or damp cloth to remove any dirt or debris
  2. avoid washing them as they can absorb water and become soggy
  3. they have a mild, earthy flavour

Given the correct conditions these mushrooms can appear anywhere. After the rains in early November and after each rain fall until May is the best time to forage.
