Description

  • pinnatifid lobes with incisions that extend less than halfway to the midrib leaves covered in fine white hair giving them the appearance of being white. The margin is dentate with symmetrical teeth and spiny with sharp stiff points
  • large purple flowers surrounded by large sharp spines
  • grows up to 2.5m

preparation

  1. pick young tender stem and leaves, steam or boil, serve with olive oil & lemon
  2. peel the skin and spines and eat raw
  3. the young flower head can be eaten raw as an artichoke
