Description

  • An erect branched plant up to 1.5m
  • the stems are covered in woolly hairs, becoming hairless further up the plant
  • gray-green, rough texture leaves (underside is lighter/white - CONFIRM!)
  • Pinnatifid pinnately divided, but not all the way down to the central axis. spiny leaves
  • pale blue spherical spiny flower heads

preparation

  1. pick tender leaves, steam or boil
  2. pick tender stems
  3. peel the skin and spines and eat raw
  4. steam or boil, serve with olive oil & lemon
