Description

  • An erect branched plant up to 1.5m
  • the stems are covered in woolly hairs, becoming hairless further up the plant
  • gray-green, rough texture leaves with a lighter/white underside
  • pinnatifidlobes extend less than halfway to midline spinywith sharp stiff points leaves
  • pale blue spherical spiny flower heads

preparation

  1. pick tender leaves, steam or boil
  2. pick tender stems
  3. peel the skin and spines and eat raw
  4. steam or boil, serve with olive oil & lemon
