Description

  • evergreen shrub or small tree, grows to 4 metres
  • even-pinnateleaflets in rows, two at tip shiny leaves with a leathery texture

preparation

  1. pick the small fruit when they have turned from red to black and use as a spice
  2. the aromatic leaves and branches are used for smoking meat
  3. Small incisions in the bark allows resin to ooze out and harden. Once hardened, the mastic can be used as a flavouring
