preparation

  1. pick thin tender stems with leaves from the tips of the plant, raw for salads
  2. the leaves have a slightly tangy and lemony flavour
  3. the thicker stems can be cooked as string beans or pickled
  4. tiny spherical black seeds can be eaten or ground into a flour

A succulent plant that can be found in sunny areas. It is said that vinegar is preferred to lemon juice as a purslane salad dressing.
