  1. pick the flower stem from the base and wash
  2. chew the green end of the stem to extract the sour/sharp flavour
  3. the flowers can be used in salads

Oxalis have an exceptionally high content of oxalic acid which gives them their sour taste

Oxalis pes-caprae is the most common variety in Cyprus but there are two other varieties:

Oxalis latifolia has pink or white flowers and grows at elevations above 500m

Oxalis corniculata has smaller yellow flowers and is less common
