EDIBLE PARTS:
To pick wild chicory, use a pair of scissors or a sharp knife to cut the leaves from the stem
Pick the leaves when they are young and tender, as they can become tough and bitter as they mature
Young tender leaves can be eaten raw in salads
Older leaves can be cooked as a green vegetable. They have a slightly bitter taste
The flowers can be used to make herbal teas
